<p> Clearwater’s Raw Lobster Tails are a ready-to-cook product that come in a frozen raw meat format. Through a specialized high pressure extraction process, the raw lobster meat is released from its shell and then frozen, locking in incredible flavour. This versatile product can be prepared in a variety of applications, without the inconvenience of cooking and shelling live lobster.</p>

Cooking Instructions

Defrost: For best results, defrost in the package in the refrigerator overnight. For quick thaw, place the package in cold water for 1 hour.

Prepare:

  • Remove the defrosted meat from the package.Β 
  • Lightly rinse under cold water and gentry pat dry. You can remove the vein that runs down the length of the tail either before or after cooking. Our delicious lobster can be sautΓ©ed, grilled or poached in minutes.
  • Lobster is cooked when the meat feels firm and springs back when lightly touched and the internal temperature is 74Β°C (165Β°F).

Poach defrosted raw, shell-off lobster tail meat in a flavourful, simmering liquid (approximately 75˚C).

Raw shell-off tails (1-2 oz) for 2.5 - 3.5 minutes
Raw shell-off tails (2-3 oz) for 4 - 6 minutes
Raw shell-off tails (3-4 oz) for 9 - 11 minutes
Raw shell-off tails (4-6 oz) for 13 - 14 minutes

Saute defrosted raw, shell-off lobster tail meat over medium-high heat in saute pan, with regular or garlic butter. Turn lobster tails over half-way through cooking.

Raw shell-off tails (1-2 oz) for 4 - 5 minutes
Raw shell-off tails (2-3 oz) for 6 - 8 minutes
Raw shell-off tails (3-4 oz) for 8 - 10 minutes
Raw shell-off tails (4-6 oz) for 10 - 12 minutes
