<p>8 oz. Clearwater&rsquo;s Raw Lobster Claw &amp; Knuckle Meat is a ready-to-cook product that comes in a frozen raw meat format. Through a specialized high pressure extraction process, the raw lobster meat is released from its shell and then frozen, locking in incredible flavour. This versatile product can be prepared in a variety of applications, without the inconvenience of cooking and shelling live lobster.</p>

Cooking Instructions

Defrost: For best results, defrost in the package in the refrigerator overnight. For quick thaw, place the sealed package in cold water for 1 hour.

Prepare: Remove the defrosted meat from the package. Lightly rinse under cold water and gently pat dry. Our delicious lobster can be sautΓ©ed, grilled or poached in minutes. Lobster is cooked when the meat feels firm and springs back when lightly touched and the internal temperature is 74Β°C (165Β°F).

Poach defrosted lobster meat for 8-10 minutes in a flavourful, simmering liquid (approximately 75˚C). Click here to view our chef's take on this quick and easy preparation.

Sauté defrosted lobster meat for 4-5 minutes over medium-high heat in saute pan, with regular or garlic butter. Turn lobster meat over half-way through cooking.
