MUSSELS: Soak mussels in cold water and discard any with broken shells or ones that are open and do not close when tapped. Scrub shells with a brush and remove any beards. Rinse thoroughly.
Steam mussels in a large pot with aromatics (garlic, onion) and liquid (wine, broth) over high heat with the lid on for 3-7 minutes until the shells open, discarding any that remain closed, and serve immediately.
SCALLOPS:
Defrost scallops before cooking. Heat 15 ml (1 tbsp) of oil in a pan over medium heat. Season scallops with salt and pepper and place individually in the pan. Be careful not to overcrowd the pan. Cook for 2 minutes or until golden brown colour starts to creep up the edges of the scallop. Turn and cook for another 2 minutes. Remove from heat and allow scallops to rest in the pan for 1 minute.
