Southern Nova Scotian Creamed Lobster on Toast

Ingredients:

1 (1.25–1.5 lb) Cooked Lobster, meat removed and chopped large
2 slices Texas-cut bread (thick sliced white bread)

Sauce Ingredients:

2 tablespoons butte
1/4 cup onion, finely diced
1 cup heavy cream (35%)
1 teaspoon tomato paste
1 teaspoon paprika
Salt and freshly ground black pepper to taste

Method:

Melt the butter in a skillet over medium heat and sauté the onions until they are soft and translucent. Stir in the paprika and tomato paste, cooking for one minute to release the flavors and color. Pour in the heavy cream and simmer gently until the sauce reduces slightly and coats the back of a spoon.

Fold in the cooked lobster meat and simmer for one minute to warm the meat through without toughening it. Season with salt and pepper. Toast the Texas-cut bread until golden brown and butter lightly if desired. Place the toast on warm plates and ladle the creamed lobster generously over the top. Serve immediately.
