Poke-style Smoked Salmon Grain Bowl

This recipe needs
Ingredients:
1 portion (115 g) Smoked Salmon
1 cup Cooked brown rice
1 teaspoon Sesame oil
1/4 cup Sweet or red onion, diced
1/4 cup Cucumber, diced
1/4 cup Cherry tomatoes, halved
1/2 Avocado, sliced
1/4 cup Shelled edamame, thawed
1/4 cup Corn kernels
Garnish:
Sriracha mayo
Nori sheets, shredded or cut into strips
Sesame seeds
Method:
Toss warm cooked brown rice with sesame oil and place in a serving bowl. Cut smoked salmon into bite-sized pieces if desired, or leave whole.
Arrange salmon, onion, cucumber, tomatoes, avocado, edamame, and corn in distinct sections over the rice base. Drizzle generously with Sriracha mayo. Garnish with nori and sesame seeds. Serve immediately.
