Hokki Poke with Arctic Surf Clams

Ingredients
7 pc Clearwater Arctic Surf Clam (aka Hokkigai), thawed in fridge for 12 hours
1/2 cup lime juice
1 cup rice vinegar
1 tbsp honey
4 tbsp soy sauce
1 1/2 cup Vidalia onions
1 1/2 cup red and yellow peppers
3/4 cup green onion
2 tbsp Furikake seasoning
Directions
- In a bowl, mix lime juice, rice vinegar, honey, and soy sauce to make Lime Splash dressing.
- Cut each piece of Clearwater Arctic Surf Clam in half (prime cut), scrape the insides to clean, then julienne.
- In a large bowl, mix onions, peppers, Clearwater Arctic Surf Clams, and Lime Splash dressing.
- Plate and sprinkle Furikake seasoning on top.
