Baked Salmon with Lemon Pepper
serves 4 as an entree
Ingredients:
4 4-6 oz Salmon fillets, fresh or defrosted
2 Lemons, 1 cut into slices, 1 for zest and juice
1 tbsp Garlic, minced
1 tbsp Olive oil
Pinch Salt
1 tsp Ground Black pepper
¼ tsp Red pepper flakes
Directions:
Preheat oven to 400oF. Prepare baking sheet with parchment paper or foil and top with Salmon fillets.
In a small bowl, mix together zest and juice of one lemon, minced garlic, olive oil, salt, black pepper and red pepper flakes. Spread mixture evenly over salmon fillets.
Top each with cut lemon slices.
Bake salmon for 12-15 minutes. Ensure the salmon flakes easily and is cooked through.
Serve with vegetables.
