Atlantic Fish Pie
Serves 6-8

Ingredients:
1 lb Haddock fillets, cut into 1-inch chunks
1/2 lb Salmon fillets, cut into chunks
1/2 lb Mixture of Shrimp and Scallops
Mashed Potato Topping:
2 lbs Potatoes, peeled and chopped
1/4 cup Butter
1/2 cup Milk
Salt and white pepper
White Sauce Ingredients:
3 tablespoons Butter
3 tablespoons Flour
2 cups Milk
1 tablespoon Fresh parsley, chopped
Salt and black pepper
Method:
Preheat oven to 400°F (200°C). Boil potatoes in salted water until tender. Drain and mash with 1/4 cup butter, 1/2 cup milk, salt, and white pepper until smooth. Set aside.
Melt 3 tablespoons butter in a saucepan over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in 2 cups milk and simmer until thickened. Remove from heat and stir in parsley, salt, and pepper. Combine haddock, salmon, shrimp, and scallops in a deep baking dish. Pour white sauce over seafood and mix gently. Spread mashed potatoes evenly over the top. Bake for 25–30 minutes until the filling is bubbling and the top is golden brown. Serve hot.
