Clearwater’s Raw Shell-on Lobster Tails are a ready-to-cook product that come in a frozen raw meat format. Produced using Clearwater’s highest quality Premium Hardshell Fresh™ Lobster, this mouthwatering product is the perfect accompaniment to any dish with easy preparation and delicious results. Simply thaw and cook!

Defrost: For best results, thaw in unopened package in the refrigerator overnight.

Storage: Once thawed, keep lobster stored in the refrigerator for no more than 24 hours. Cooked lobster should be refrigerated and consumed within 24 hours.

Baked: Preheat oven to 425°F (220°C). Quickly rinse off the thawed lobster under cold water. If desired, use kitchen shears to cut a ¼” (0.6 cm) band down the back length of the shell. Drizzle with olive oil on both sides and place on a baking tray. Cook on the middle rack for about 12 minutes or until the internal temperature is 145-155°F (65-70°C). Serve immediately with herbed butter or in a salad with a lemon wedge.

Steamed: Quickly rinse off the thawed lobster under cold water. Bring a pot with 2 quarts (2 litres) of water with 2 tbsp (30 ml) of lemon juice or white wine, a bay leaf and any other aromatics as desired (carrot, celery, spices, etc.) to a boil. Put the lobster in a steam basket 1” above the surface of the boiling liquid. Steam for 10 minutes or until the internal temperature is 145-155°F (65-70°C). Serve immediately.
