Ingredients:

12 Live Oysters, scrubbed
Crushed ice or sea salt (for serving)

Spicy Mignonette Ingredients:

1/4 cup Red wine vinegar
1 small Shallot, finely minced
1 fresh Jalapeño, seeded and finely minced
1 teaspoon Fresh lime juice
1/2 teaspoon Fresh lime zest
1/2 teaspoon Sugar
Coarse black pepper

Method:

Combine vinegar, shallot, jalapeño, lime juice, lime zest, sugar, and a generous pinch of coarse black pepper in a small bowl. Stir well and let sit for at least 15 minutes to allow flavors to meld and sugar to dissolve.

Shuck oysters, keeping them level to retain their natural liquor. Run a knife under the meat to detach it from the shell. Arrange oysters on a bed of crushed ice or sea salt. Spoon a small amount of the spicy mignonette over each oyster, or serve in a small dish on the side. Serve immediately.
