Lobster Roll with Egg Mayo

Ingredients:
1 (1.25–1.5 lb) Cooked Lobster, meat removed and chopped into large chunks
2 split-top hot dog buns (brioche style preferred)
2 tablespoons salted butter (divided)
Rich Mayo Ingredients:
1/4 cup mayonnaise
1 egg yolk
1/2 teaspoon soy sauce
1 tablespoon green onion, slivered OR celery, finely minced (optional)
Freshly cracked black pepper
Method:
Whisk mayonnaise, egg yolk, and soy sauce in a bowl. Melt 1 tablespoon butter in a skillet over medium-low heat. Add lobster chunks and heat for 1–2 minutes until warmed through.
Transfer warm lobster to the mayonnaise mixture. Add green onion or celery (if using) and toss to coat. Melt remaining butter in the pan and toast buns. Fill buns with lobster mixture and season with black pepper. Serve immediately.
