Ingredients:

1 (1.25–1.5 lb) Live Lobster
Water (large pot, enough to submerge lobster)
2 tablespoons sea salt

Garlic Butter Ingredients:

1/2 cup salted butter
2 cloves garlic, finely minced
1 teaspoon fresh parsley, chopped (optional)
Lemon wedges (for serving)

Method:

Fill a large stockpot with enough water to completely cover the lobster. Stir in the sea salt and bring the water to a rolling boil over high heat. Lower the lobster headfirst into the boiling water. Cover the pot, return the water to a boil and cook for 9 – 11 minutes ensuring internal temperature reaches 74oC. Alternatively, if using a steamer, cook for 12 – 14 minutes or until internal temperature reaches 74oC. When cooked, the shell should turn a bright red.

While the lobster cooks, melt the butter in a small saucepan over low heat. Stir in the minced garlic and cook for 1–2 minutes until fragrant but not browned. Remove from heat and stir in parsley. Remove the lobster with tongs and let it drain over the pot for a moment before serving with the warm garlic butter and lemon wedges.
