Comeau Salt Cod Fillets

454 g (1 lb) boned, salt cod fillets. Comeau Salt Cod fillets are delicious in curry, stew and brandades.
The larger fillets of salt cod are well suited for use in curry, stew and brandades. the fillets can be broken up for use in fritters, chowders, fish cakes, fillings for seafood pot pies and seafood stews. To prepare: Soak 454 g (1 lb) of salt fish in 6 cups of fresh water in the fridge for 24 hours, changing the water 3 times. Parboil the fish in 6 cups of fresh water for 7-10 minutes and drain for uses suggested above.
